Finish we use and recommend.
OSMO TopOil.
A blend of organic plant oils and waxes providing a natural finish. 100% food-safe, conforming to EN-1186 and provides resistance to household substances. While several coats might initially be applied by us to a new board, 2 coats are often enough. If required, a single coat might be all that is required to refresh the look of your board, although many like the more natural appearance aquired over time. If required, items should be resanded up to a minimum of 220+ grit with a high quality paper such as 3M, and up to 600+ grit, if you want to achieve a higher lustre appearance.

Care and Maintenance.
The boards are best to be cleaned with a damp cloth with a mild liquid soap. Full immersion, especially prolonged exposure, is best avoided, and the long, hot and wet dishwater cycles can cause premature failure of the product. The same recommendations would mostly apply universally to all wood products. The finish can be renewed and is compatible with most dedicated board finishing oils, although many users prefer the natural weathered look achieved with regular use.

Glue.
On multipiece items, we use Titebond III, a well-known brand, water-resistant and indirect food-safe, meaning you should not eat it; but as a glue for chopping boards, it is perfect and should not to be compromised in normal use and care. It is also one of the few wood glues aprouved by the FDA as Foodsafe for indirect food contact. It is manufactured by Franklin Adhesives& Polymers who state that it releases no fumes and is generally non-toxic. It is the recommended glue for kitchenwares, butchers clocks and other wooden items within a food preparation area.
